Zaatar and Lavender Mine

The Shouf Biosphere Reserve, with its ultimate goal to conserve the natural and cultural heritage of the Shouf region and sustain the socio-economic well-being of its farmers and nearby communities, has been actively promoting ecotourism, agritourism, rural tourism, and agro-food production. A perfect example of its sustainability model is the Lavender & Zaatar Mine, led by George and Rima Arbid, who started growing lavender and Zaatar at their rich and pure plantations that received the organic certification in 2019.  Georges, originally an architect, decided to return with his wife to their roots in “Maaser el Shouf” and venture into the lavender’s vast therapeutic (lavender bath salts, essential oils….) and culinary worlds with the dessert recipes created by Rima (Halawet El Jibn dipped in lavender syrup, “Maamoul” with lavender water, Lavender cake, cookies…).
